The free-range meat paradox: the conflict between free-range poultry production systems and biocontainment against zoonotic microorganisms
2012
Abstract: This case study takes as its starting point the paradox of
free-rangepoultry production – the fact that this production system (which is favourably viewed by a certain segment of consumers) does not allow
biocontainmentagainst zoonotic microorganisms, so may increase the risk of transmission of foodborne disease. It demonstrates how basic research-driven studies into the colonization dynamics of Salmonella and
Campylobacterin
free-rangegeese have revealed approaches that could potentially be used to mitigate the risk of foodborne transmission of these pathogens. The case also outlines the positive benefits of these studies for the company producing the geese and possible directions for
future studies.
