Allergy to galactose-1,3-alpha-galactose (alpha-gal) is a rare IgE-mediated allergy1 , where symptoms mainly occur hours2,3 after ingestion of mammalian innards or meat, e.g. pork, beef, and lamb. Knowledge on absorption rate and size of allergens, i.e. proteins and especially glycoproteins and glycolipids, are sparse, with many variables involved; types and structure of allergens, preparation, texture, cooking, and persons age.
